Coconut Almond Butter Cookies

Ingredients:

  • 3/4 cup Almond Butter (192 g)Coco Almond Cookies
  • 1/2 cup Splenda
  • 2 Tbsp. Coconut Oil (28 g)
    • Melted and cooled
  • 2 eggs
  • 1/4 cup Coconut Flour (28 g)
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Salt
  • Optional: 1/3 cup mix-ins
    • I used mini M&M’s :)

  • Preheat oven to 350°F
  • Line a baking sheet with parchment paper and spray with cooking oil.
  • In a bowl, mix together the almond butter, splenda, and coconut oil.
  • Add in the eggs and mix.
  • Mix in the coconut flour, baking soda, and salt until a dough forms.
  • Scoop the dough onto the baking sheet
    • Makes about 20 cookies
  • Bake for 8-10 minutes
  • Let cool and enjoy!
