Ingredients:Oatmeal Raisin

  • 1 cup Oats (80 g)
  • 1/3 cup Coconut Flour (30 g)
  • 1/2 cup Splenda
  • 1/2 tsp. Salt
  • 1/2 tsp. Baking Powder
  • 1/2 tsp. Cinnamon
  • 1 Egg
  • 2 Egg Whites
  • 1 tsp. Vanilla Extract
  • 1/3 cup Raisins

 

Instructions:

  1. Preheat oven to 350°FOatmeal Raisin2
  2. Line a baking sheet with parchment paper and spray with cooking oil.
  3. Take half of the oats (1/2 cup) and blend them in a food processor so they become a powder.
    • I use my Magic Bullet for this.
  4. In a bowl, combine the oat powder, the remaining 1/2 cup oats, coconut flour, splenda, salt, baking powder, and cinnamon.
  5. Add in the egg, egg whites, and vanilla and mix well until a dough forms.
  6. Scoop the dough onto the baking sheet.
    • Makes about 12 cookies
  7. Bake for 8 minutes.
  8. Let cool and enjoy!
