Pumpkin Oat Bar 2

 

 

Ingredients:Pumpkin Oat Bar

  • 1 cup Pumpkin Puree (244 g)
  • 1 cup Oats (80 g)
  • 1.5 scoops Vanilla Protein Powder (45 g)
    • You can substitute in flour if you don’t want to use protein powder.
  • 1 Tbsp. Cinnamon
  • 1 tsp. Baking Powder
  • 1 egg
  • 2 Egg Whites
  • 1 tsp. Vanilla Extract

 

Instructions:

  1. Preheat oven to 375°F
  2. In a bowl, combine the pumpkin puree, oats, protein powder, cinnamon, and baking powder together.
  3. Add the egg, egg whites, and vanilla to the dry ingredient mixture and combine until well-blended.
  4. Spray a square baking pan with cooking oil.
  5. Pour the mixture in the baking pan.
  6. Bake for 20 minutes.
  7. Let cool and enjoy!
    • I cut mine into 9 bars! (58 grams each)
